Juicy, seared steak bites coated in a zesty cowboy butter sauce. Perfect as a party appetizer or a quick weeknight dinner.

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Pat the steak cubes dry with paper towels. Season generously with salt and pepper.
  2. Heat olive oil in a large cast-iron skillet over medium-high heat until shimmering.
  3. Add steak cubes in a single layer, working in batches if necessary to avoid overcrowding. Sear for 2-3 minutes per side for medium-rare, or until desired doneness. Remove steak from skillet and set aside.
  4. Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute.
  5. Stir in lemon juice, Dijon mustard, paprika, and cayenne pepper (if using). Cook for another minute, stirring constantly, until the sauce is well combined.
  6. Return the steak bites to the skillet and toss to coat them evenly in the cowboy butter sauce.
  7. Stir in fresh parsley.
  8. Serve immediately.

Notes

  • For a spicier kick, increase the amount of cayenne pepper.
  • Serve with toothpicks for easy appetizer serving.
  • These steak bites are also delicious served over rice or with crusty bread for dipping.
  • Adjust cooking time based on your preferred level of doneness. Use a meat thermometer for accuracy: 130-135°F for medium-rare.
