Make this creamy, savory Cottage Cheese Queso using your blender for a smooth texture in just five minutes. This high protein dip is a guilt-free alternative perfect for game day or a quick snack.

Ingredients

  • 1 cup low-fat cottage cheese
  • 4 ounces reduced-fat cheddar cheese, shredded
  • 1/4 cup milk (or water for thicker dip)
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup Rotel (diced tomatoes and green chilies, drained if preferred)
  • 1/4 cup nutritional yeast (optional, for extra cheesy flavor)

Instructions

  1. Place the cottage cheese, shredded cheddar cheese, milk, taco seasoning, garlic powder, onion powder, and nutritional yeast (if using) into a high-speed blender.
  2. Blend on high until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed. This should take about 1 to 2 minutes.
  3. Pour the blended mixture into a microwave-safe bowl.
  4. Stir in the drained Rotel.
  5. Microwave on high for 60 to 90 seconds, stirring halfway through, until the queso is hot and bubbly.
  6. Serve immediately with tortilla chips or fresh vegetables for dipping.

Notes

  • For a thicker dip, start with less milk and add more only if the blender struggles to process the ingredients.
