Fudgy, high-protein brownie bites made with blended cottage cheese for a healthier treat. Perfect for post-workout snacks or a guilt-free dessert.

  • 1 cup blended cottage cheese
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 1 scoop (30g) chocolate protein powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a mini muffin tin.
  2. In a blender, combine the blended cottage cheese, eggs, applesauce, maple syrup, and vanilla extract. Blend until smooth.
  3. In a separate bowl, whisk together the whole wheat flour, cocoa powder, protein powder, baking powder, and salt.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the chocolate chips, if using.
  6. Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the brownie bites cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra fudginess, you can add a tablespoon of melted butter or coconut oil to the batter.
  • Ensure your cottage cheese is well-blended for a smooth texture.
  • These bites can be stored in an airtight container in the refrigerator for up to 5 days.
