A quick, single-serve brownie made with cottage cheese, perfect for a high-protein, low-sugar treat.

Ingredients

  • 1/4 cup cottage cheese
  • 1 large egg
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon almond flour
  • 1 tablespoon erythritol or other sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1 teaspoon sugar-free chocolate chips

Instructions

  1. Combine cottage cheese and egg in a microwave-safe mug or small bowl. Mash the cottage cheese with a fork until smooth.
  2. Whisk in the egg until well combined.
  3. Add cocoa powder, almond flour, sweetener, baking powder, vanilla extract, and salt. Stir until just combined, being careful not to overmix.
  4. If using, fold in the chocolate chips.
  5. Microwave on high for 60-90 seconds, or until the brownie is set but still moist in the center. Cooking time will vary depending on your microwave.
  6. Let cool for a minute before enjoying.

Notes

  • For a richer flavor, you can add a teaspoon of instant coffee granules.
  • Ensure your cottage cheese is smooth; if it has large curds, blend it briefly before using.
