Make these fluffy Cinnamon Sugar French Toast Muffins for a sweet, portable breakfast or brunch treat that tastes just like classic French toast without the frying pan mess.

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (for batter)
  • 1/2 cup granulated sugar (for batter)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup milk
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, 1 teaspoon of cinnamon, and 1/2 cup of sugar for the batter.
  3. In a separate medium bowl, whisk together the melted butter, milk, buttermilk, eggs, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine. This batter creates your fluffy breakfast treats.
  5. Prepare the cinnamon sugar topping: In a small, shallow bowl, mix the remaining 1/4 cup of sugar and 1 tablespoon of cinnamon thoroughly.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Dip the top of each filled muffin cup lightly into the cinnamon sugar mixture, coating the surface evenly. Alternatively, sprinkle the topping over the batter.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. You want golden brown muffins.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra French toast flavor, you can lightly dip the tops of the filled cups into a small amount of beaten egg before adding the cinnamon sugar topping.
  • These are excellent make ahead breakfast items; store cooled muffins in an airtight container at room temperature for up to three days.
  • If you want bakery style muffins, fill the cups almost to the top for a higher dome.
