Make these soft, chewy Christmas Gooey Butter Cookies using yellow cake mix for an easy holiday treat. They feature a rich, buttery center and are coated in powdered sugar for a festive look.

  • 1 box (15.25 ounces) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 8 ounces cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar, for rolling
  • 1/2 cup red and green sprinkles

Instructions

  1. Preheat your oven to 350 degrees F. Line baking sheets with parchment paper.
  2. In a medium bowl, combine the cake mix, melted butter, and 1 egg. Mix until a soft dough forms.
  3. In a separate bowl, beat the softened cream cheese, the second egg, and vanilla extract until smooth.
  4. Take about 1 tablespoon of the dough mixture and flatten it slightly in your palm. Place about 1/2 teaspoon of the cream cheese mixture in the center of the dough. Fold the dough around the filling to seal it completely, forming a ball.
  5. Roll each dough ball first in the powdered sugar until fully coated.
  6. Roll the sugared dough ball in the red and green sprinkles.
  7. Place the coated cookie balls onto the prepared baking sheets, leaving about 2 inches between them.
  8. Bake for 10 to 12 minutes. The edges will look set, but the centers will still look soft and gooey. Do not overbake.
  9. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • For a true St. Louis Gooey Butter Cookie experience, do not flatten the dough balls before baking; the filling will spread naturally.
  • You can make these cookies ahead of time and store them in an airtight container for up to 4 days.
  • If you do not have red and green sprinkles, you can roll the dough balls only in powdered sugar for a classic look.
