3 ripe bananas, mashed
1/3 cup melted butter
1/2 teaspoon baking soda
Pinch of salt
3/4 cup sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 cup chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, mash the ripe bananas with a fork.
Stir in the melted butter, baking soda, salt, and sugar.
Mix in the beaten egg and vanilla extract.
Fold in the flour until just combined. Do not overmix.
Gently stir in the chocolate chips.
Pour the batter into the prepared loaf pan.
Bake for 50-65 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For extra moist banana bread, ensure your bananas are very ripe.
You can substitute milk chocolate chips for semi-sweet if preferred.
This bread freezes well. Wrap cooled bread tightly in plastic wrap and then foil.
