Make flavorful, juicy shredded chicken tacos fast on the stovetop. This recipe delivers bold Mexican seasoning perfect for a simple weeknight dinner or family taco night.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning mix
  • 1/2 cup water
  • 12 small corn or flour tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  2. Add the chicken breasts to the skillet. Sprinkle the taco seasoning mix over the chicken.
  3. Pour in the chicken broth and water. Bring the liquid to a simmer.
  4. Reduce the heat to low, cover the skillet, and let the chicken simmer for 15 to 20 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken breasts from the skillet and place them on a cutting board. Keep the remaining liquid simmering uncovered to reduce slightly, about 2 minutes.
  6. Shred the chicken using two forks. Return the shredded chicken to the skillet and toss it with the reduced sauce until the chicken is fully coated and juicy.
  7. Warm your tortillas according to package directions (you can warm them directly over a gas flame for a few seconds per side for best results).
  8. Serve the shredded chicken filling immediately in the warm tortillas with your favorite toppings.

Notes

  • For extra flavor, use half chicken broth and half salsa in place of the water and broth combination.
  • If you prefer softer chicken, cover the skillet while simmering to steam the chicken slightly.
  • This shredded chicken filling works well for meal prep; store it in an airtight container in the refrigerator for up to 4 days.
