2 cups cooked chicken, shredded or diced
4 cups broccoli florets, fresh or frozen
1 can (10.5 oz) condensed cream of chicken soup
1/2 cup milk
1 cup shredded cheddar cheese
1/2 cup crushed Ritz crackers
2 tablespoons butter, melted
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the cooked chicken, broccoli florets, condensed cream of chicken soup, milk, and cheddar cheese. Stir until well combined.
Pour the mixture into a 9×13 inch baking dish.
In a small bowl, mix the crushed Ritz crackers with the melted butter.
Sprinkle the buttered cracker crumbs evenly over the top of the casserole.
Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
Notes
You can use a rotisserie chicken for convenience.
If using frozen broccoli, do not thaw before adding to the casserole.
This casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking. Add a few extra minutes to the baking time if baking from cold.
For a make-ahead freezer meal, assemble the casserole, cover tightly, and freeze. Thaw in the refrigerator overnight before baking.
