1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 cup cooked, crumbled bacon
1 (10.5 ounce) can condensed cream of chicken soup
1/2 cup milk
1 packet (1 ounce) ranch seasoning mix
2 cups shredded cheddar cheese, divided
1 (16 ounce) package frozen tater tots
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the chicken pieces, crumbled bacon, condensed cream of chicken soup, milk, and ranch seasoning mix. Stir until well combined.
Fold in 1 cup of the shredded cheddar cheese.
Pour the mixture into a 9×13 inch baking dish.
Arrange the frozen tater tots evenly over the top of the chicken mixture.
Bake for 45-50 minutes, or until the tater tots are golden brown and crispy, and the casserole is bubbly.
Sprinkle the remaining 1 cup of cheddar cheese over the top during the last 5-10 minutes of baking.
Let stand for 5-10 minutes before serving.
Notes
For an extra creamy casserole, you can substitute cream of mushroom soup for the cream of chicken soup.
Add a splash of hot sauce to the chicken mixture if you like a little heat.
