A simple and comforting casserole featuring chicken, bacon, ranch, cheese, and crispy tater tots. This easy one-pan meal is perfect for weeknight dinners or potlucks.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cooked, crumbled bacon
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1/2 cup milk
  • 1 packet (1 ounce) ranch seasoning mix
  • 2 cups shredded cheddar cheese, divided
  • 1 (16 ounce) package frozen tater tots

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the chicken pieces, crumbled bacon, condensed cream of chicken soup, milk, and ranch seasoning mix. Stir until well combined.
  3. Fold in 1 cup of the shredded cheddar cheese.
  4. Pour the mixture into a 9×13 inch baking dish.
  5. Arrange the frozen tater tots evenly over the top of the chicken mixture.
  6. Bake for 45-50 minutes, or until the tater tots are golden brown and crispy, and the casserole is bubbly.
  7. Sprinkle the remaining 1 cup of cheddar cheese over the top during the last 5-10 minutes of baking.
  8. Let stand for 5-10 minutes before serving.

Notes

  • For an extra creamy casserole, you can substitute cream of mushroom soup for the cream of chicken soup.
  • Add a splash of hot sauce to the chicken mixture if you like a little heat.
  • This casserole reheats well, making it a great option for meal prep or leftovers.
