A simple, budget-friendly casserole with ground beef, rice, and cheese, perfect for a weeknight family dinner.

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 can (10.75 ounces) condensed cream of mushroom soup
  • 1 can (10.75 ounces) condensed tomato soup
  • 1 cup water
  • 2 cups cooked white rice
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef and chopped onion over medium heat. Drain off any excess grease.
  3. Stir in the cream of mushroom soup, tomato soup, and water. Bring to a simmer.
  4. Add the cooked rice and stir to combine. Season with salt and pepper.
  5. Pour the mixture into a 9×13 inch baking dish.
  6. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  8. Let stand for a few minutes before serving.

Notes

  • This casserole can be assembled ahead of time and refrigerated for up to 2 days. Bake as directed, adding a few extra minutes if baking from cold.
  • For a kid-friendly option, you can omit the onion or finely mince it.
  • You can substitute cream of chicken soup for cream of mushroom soup if preferred.
