A hearty and comforting casserole featuring seasoned ground beef, tender potatoes, and a generous layer of melted cheese. Perfect for family dinners or potlucks.

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • 1/4 cup beef broth
  • 2 pounds potatoes, peeled and thinly sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
  3. Stir in the minced garlic, salt, pepper, paprika, and thyme. Cook for 1 minute more until fragrant.
  4. Pour in the beef broth and bring to a simmer. Reduce heat and cook for 5 minutes, stirring occasionally.
  5. Layer half of the sliced potatoes in the bottom of a greased 9×13 inch baking dish.
  6. Spread the ground beef mixture evenly over the potatoes.
  7. Top with the remaining sliced potatoes.
  8. In a small bowl, whisk together the milk and half of the shredded cheeses. Pour this mixture evenly over the top layer of potatoes.
  9. Cover the baking dish tightly with aluminum foil.
  10. Bake for 45 minutes.
  11. Remove the foil and sprinkle the remaining shredded cheeses over the top.
  12. Bake for another 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  13. Let stand for 5-10 minutes before serving.

Notes

  • For an extra creamy bake, you can add a layer of sour cream or cream of mushroom soup between the beef and potato layers.
  • Feel free to add other vegetables like peas or corn to the beef mixture.
  • If you prefer a crispier topping, broil for the last 1-2 minutes, watching carefully to prevent burning.
