  • 48 Ritz crackers (buttery cracker dessert base)
  • 24 soft caramel candies, unwrapped
  • 2 tablespoons heavy cream or milk
  • 1½ cups milk chocolate or semi-sweet chocolate chips
  • Holiday sprinkles, crushed candy canes, or coarse sea salt (optional topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Arrange the Ritz crackers in a single layer on the prepared baking sheet.
  3. Place one unwrapped soft caramel candy on top of each cracker.
  4. Bake for 3 to 5 minutes, watching closely, until the caramel is soft and slightly melted. Do not let the crackers brown.
  5. Remove the sheet from the oven. Immediately top each cracker with a second Ritz cracker to create a sandwich. Gently press down to adhere the caramel.
  6. Let the cracker sandwiches cool completely on the baking sheet until the caramel sets firm.
  7. Prepare the chocolate topping: In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring well after each, until smooth.
  8. Dip the top half of each cooled cracker sandwich into the melted chocolate, or drizzle the chocolate over the tops.
  9. If using, immediately sprinkle with sea salt, sprinkles, or crushed candy canes before the chocolate hardens.
  10. Allow the chocolate to set completely before serving or storing.

  • For a no-bake version, you can skip the oven step and simply melt the caramel with the cream in a saucepan until smooth, then sandwich the crackers and let them cool.
