A cheesy, low-carb casserole with ground beef, cabbage, and Cajun seasoning.

  • 1 pound ground beef
  • 1 medium head of cabbage, shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup sour cream
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  3. Add the shredded cabbage to the skillet with the ground beef. Cook, stirring occasionally, until the cabbage is tender, about 5-7 minutes.
  4. Stir in the sour cream, Cajun seasoning, salt, and pepper. Mix well to combine.
  5. Transfer the mixture to a 9×13 inch baking dish.
  6. Top evenly with the shredded cheddar and Monterey Jack cheeses.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let stand for 5 minutes before serving.

Notes

  • For a spicier casserole, add a pinch of cayenne pepper.
  • This casserole is great for meal prep. Divide into individual portions for easy lunches.
  • You can substitute ground turkey or chicken for the ground beef.
