4 boneless, skinless chicken breasts
Salt and freshly ground black pepper to taste
1 pint cherry tomatoes, quartered
1/4 cup chopped red onion
2 cloves garlic, minced
1/4 cup chopped fresh basil
1 tablespoon balsamic glaze
1 tablespoon olive oil
Optional: Shredded mozzarella cheese for topping
Instructions
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Season the chicken breasts with salt and pepper.
Sear the chicken breasts for 5-7 minutes per side, until cooked through and no longer pink in the center. Remove chicken from the skillet and set aside.
In the same skillet, add the quartered cherry tomatoes, chopped red onion, and minced garlic. Cook for 3-5 minutes, until the tomatoes begin to soften.
Stir in the fresh basil and 1 tablespoon of olive oil. Season with salt and pepper to taste.
Return the chicken breasts to the skillet and spoon the tomato mixture over the top.
Drizzle with balsamic glaze. If using, sprinkle with mozzarella cheese and cover for 1-2 minutes until melted.
Serve immediately.
