4 boneless, skinless chicken breasts
1 cup broccoli florets, finely chopped
1/2 cup shredded cheddar cheese
1/4 cup cream cheese, softened
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon olive oil
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, combine the chopped broccoli, cheddar cheese, cream cheese, minced garlic, salt, and pepper. Mix well until thoroughly combined.
Butterfly each chicken breast by slicing horizontally, almost all the way through, to create a pocket.
Carefully stuff the broccoli and cheese mixture into the pocket of each chicken breast.
Secure the opening of each chicken breast with toothpicks to prevent the filling from leaking out.
Heat the olive oil in an oven-safe skillet over medium-high heat.
Sear the stuffed chicken breasts for 2-3 minutes per side until lightly browned.
Transfer the skillet to the preheated oven.
Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Remove toothpicks before serving.
Notes
For a low-carb option, serve with a side salad or steamed green beans.
You can substitute Gruyere or Monterey Jack cheese for cheddar.
Ensure the broccoli is finely chopped for easier stuffing.
