Bite-sized meatballs with a smoky bourbon glaze, crispy bacon, and melted cheddar cheese, perfect for game day or any party.

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 egg
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup bourbon
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • Toothpicks for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, chopped onion, egg, milk, salt, and pepper. Mix gently until just combined.
  3. Roll the mixture into 1-inch meatballs and place them on a baking sheet.
  4. Bake for 15-20 minutes, or until cooked through.
  5. While the meatballs bake, prepare the bourbon glaze. In a small saucepan, combine bourbon, ketchup, brown sugar, Worcestershire sauce, and garlic powder. Bring to a simmer over medium heat and cook for 5 minutes, stirring occasionally, until slightly thickened.
  6. Once the meatballs are cooked, drain any excess fat.
  7. Add the crumbled bacon and shredded cheddar cheese to the meatballs.
  8. Pour the bourbon glaze over the meatballs and toss gently to coat.
  9. Return the meatballs to the oven for 5 minutes, or until the cheese is melted and bubbly.
  10. Serve hot with toothpicks for easy serving. Offer your favorite dipping sauces on the side.

Notes

  • For a slow cooker option, place cooked meatballs in a slow cooker on the ‘warm’ setting. Pour the prepared bourbon glaze over them and stir in crumbled bacon and cheddar cheese. Stir occasionally until cheese is melted.
  • You can also cook these meatballs in a large skillet over medium-high heat, turning to brown on all sides, until cooked through. Then add the glaze, bacon, and cheese and cook until cheese is melted.
  • Make these ahead by preparing the meatballs and baking them. Store them in an airtight container in the refrigerator. Reheat and add glaze, bacon, and cheese before serving.
