  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips, plus extra for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
  2. Place the rinsed black beans, eggs, cocoa powder, melted oil/butter, sugar, and vanilla extract into a food processor.
  3. Process the mixture until it is completely smooth. Stop and scrape down the sides as needed to ensure no bean chunks remain. This step is key for fudgy black bean brownies.
  4. Add the baking powder and salt to the food processor and pulse a few times to combine.
  5. Gently fold in the 1/2 cup of chocolate chips using a spatula.
  6. Pour the batter into your prepared baking pan and spread evenly. Sprinkle extra chocolate chips over the top.
