Ingredients

  • 1 cup vanilla protein powder
  • 1/2 cup coconut flour
  • 1/4 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/4 cup rainbow sprinkles
  • Pinch of salt

Instructions

  1. In a large bowl, combine protein powder, coconut flour, and salt.
  2. Add applesauce, maple syrup, almond milk, and vanilla extract. Mix until a dough forms.
  3. Stir in the rainbow sprinkles.
  4. Press the dough evenly into an 8×8 inch pan lined with parchment paper.
  5. Chill in the refrigerator for at least 30 minutes.
  6. Slice into bars and serve.

Notes

  • For a vegan option, use a vegan protein powder and ensure your sprinkles are vegan.
  • If the dough is too dry, add a little more almond milk, one teaspoon at a time. If it’s too wet, add a bit more coconut flour.
  • Store bars in an airtight container in the refrigerator for up to a week.
