  • 1 tablespoon unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup lager beer (like Yuengling or similar)
  • 1 cup milk (whole or 2%)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly whisk in the beer until smooth. Cook, stirring, until the mixture thickens slightly, about 3 minutes.
  4. Whisk in the milk. Continue cooking until the mixture coats the back of a spoon. Do not let it boil rapidly.
  5. Reduce the heat to low. Add the shredded cheddar and Monterey Jack cheeses one handful at a time, stirring until each addition is fully melted and smooth before adding more.
  6. Stir in the Dijon mustard, garlic powder, and cayenne pepper.
  7. Keep the dip warm over very low heat or transfer to a slow cooker for serving. Serve immediately with soft pretzels, chips, or vegetables.

  • For a non-alcoholic version, substitute the beer with chicken broth or non-alcoholic beer.
