  • 1 package (8 ounces) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup Baileys Irish Cream liqueur
  • 1 cup heavy whipping cream, cold
  • 1 package (3.4 ounces) instant chocolate pudding mix
  • 1 1/2 cups cold milk
  • 1 package (14.3 ounces) chocolate sandwich cookies (like Oreos), crushed
  • 1 cup chocolate chips or chopped chocolate for garnish
  • Extra Baileys Irish Cream for drizzling (optional)

Instructions

  1. Prepare the cookie crust layer: Place half of the crushed chocolate sandwich cookies in the bottom of a large glass trifle bowl or individual serving glasses. Press lightly to form a base.
  2. Make the cheesecake layer: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Slowly mix in 1/2 cup of Baileys Irish Cream until fully combined and creamy. Set aside.
  3. Prepare the chocolate pudding layer: In a separate bowl, whisk the instant chocolate pudding mix with the cold milk until the mixture thickens, about 2 minutes. Stir in 1/4 cup of Baileys Irish Cream into the pudding.
  4. Whip the cream: In a clean, cold bowl, whip the heavy whipping cream until stiff peaks form. Gently fold half of the whipped cream into the cream cheese mixture to lighten it.
  5. Assemble the trifle: Begin layering the components in the trifle bowl. Start with a layer of the remaining crushed cookies. Top this with half of the Baileys cheesecake mixture.
  6. Add the next layers: Spread all of the chocolate pudding mixture evenly over the cheesecake layer. Top the pudding with the remaining Baileys cheesecake mixture.
  7. Finish the layers: Gently spread the remaining whipped cream over the top layer. Sprinkle the remaining crushed cookies and chocolate chips over the whipped cream.
  8. Chill: Cover the trifle and refrigerate for at least 4 hours, or preferably overnight, to allow the layers to set. If desired, drizzle with a little extra Baileys before serving.

Notes

  • For individual serving trifles, use clear glasses or mason jars for a beautiful presentation.
  • If you prefer a stronger liqueur flavor, you can substitute a small amount of the milk used for the pudding with Baileys.
  • You can substitute store-bought chocolate cake cubes for some of the cookie layers if you want a cake element.
