1 cup full-fat cottage cheese
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked, crumbled bacon
1 cup shredded Gruyere cheese
Optional: chives for garnish
Instructions
Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or silicone egg bite molds. If using a muffin tin, place it inside a larger baking pan.
In a blender, combine the eggs, cottage cheese, milk, salt, and pepper. Blend until completely smooth and creamy.
Stir the crumbled bacon and shredded Gruyere cheese into the blended egg mixture.
Pour the mixture evenly into the prepared muffin cups or molds, filling each about two-thirds full.
If using a muffin tin, carefully pour hot water into the larger baking pan until it comes about halfway up the sides of the muffin cups. This creates a water bath for even cooking.
Bake for 20-25 minutes, or until the egg bites are set and a toothpick inserted into the center comes out clean.
Let the egg bites cool in the pan for a few minutes before carefully removing them.
Garnish with chives if desired.
Notes
For a smoother texture, ensure your cottage cheese is full-fat.
You can substitute other cheeses like cheddar or Swiss for Gruyere.
