A hearty and creamy one-pot soup loaded with ground beef, potatoes, cheddar cheese, and crispy bacon. This comforting dish is perfect for a weeknight meal or a crowd-pleasing appetizer.

Ingredients

  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced potatoes (about 2 medium)
  • 1 cup milk
  • 1/2 cup heavy cream
  • 8 ounces shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices bacon, cooked and crumbled
  • Optional toppings: sour cream, chives, extra shredded cheese

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the beef broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Stir in the milk and heavy cream. Heat through, but do not boil.
  5. Gradually stir in the shredded cheddar cheese until melted and smooth.
  6. Season with salt and pepper to taste.
  7. Ladle the soup into bowls and top with crumbled bacon and your favorite optional toppings.

Notes

  • For a thicker soup, you can mash some of the cooked potatoes against the side of the pot.
  • This soup reheats well. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
  • You can substitute ground turkey or sausage for the ground beef.
