Ingredients

Scale
  • 12 ounces white chocolate almond bark
  • 1 cup creamy peanut butter
  • 6 cups crispy rice cereal
  • 2 cups mini marshmallows

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a large microwave-safe bowl, melt the white chocolate almond bark according to package directions, stirring until smooth.
  3. Stir the creamy peanut butter into the melted chocolate until fully combined.
  4. Fold in the crispy rice cereal and mini marshmallows until all dry ingredients are coated evenly.
  5. Drop rounded tablespoons of the mixture onto the prepared baking sheet.
  6. Allow the cookies to set completely at room temperature, or place them in the refrigerator for 15 minutes to speed up the process.
  7. Store the finished cookies in an airtight container.

Notes

  • For a different texture, substitute half of the crispy rice cereal with mini pretzels or dry chow mein noodles.
  • If you do not have almond bark, you can use white chocolate chips, but you may need to add 1 teaspoon of vegetable oil to help the mixture flow better.
  • These are excellent for holiday cookie plates or as last minute treats.
