1.5 lbs flank steak
1/4 cup lime juice
2 tbsp olive oil
2 cloves garlic, minced
1 tsp cumin
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
12 corn tortillas
1/2 cup chopped white onion
1/2 cup chopped fresh cilantro
Lime wedges, for serving
Instructions
In a bowl, combine lime juice, olive oil, minced garlic, cumin, chili powder, salt, and pepper. Add flank steak and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
Heat a large skillet or griddle over medium-high heat. Remove steak from marinade and discard marinade. Sear steak for 3-5 minutes per side, or until desired doneness.
Let steak rest for 5-10 minutes, then thinly slice against the grain.
Warm corn tortillas on the skillet or griddle until pliable.
Fill each tortilla with sliced steak, chopped onion, and fresh cilantro.
Serve immediately with lime wedges.
Notes
For extra flavor, you can grill the steak instead of searing it in a skillet.
Serve with your favorite salsa for an added kick.
