Crispy, tender roasted potatoes infused with bright lemon and garlic, a classic Mediterranean side dish.

  • 2 pounds Yukon Gold potatoes, cut into 1-inch wedges
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup low-sodium chicken broth or water

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato wedges with olive oil, lemon juice, minced garlic, oregano, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on a large baking sheet.
  4. Pour the chicken broth or water over the potatoes.
  5. Roast for 45-55 minutes, flipping the potatoes halfway through, until they are tender and golden brown with crispy edges.
  6. Serve hot as a side dish.

Notes

  • For extra crispy potatoes, you can broil them for the last 2-3 minutes of cooking, watching carefully to prevent burning.
  • This recipe pairs well with grilled chicken, lamb, or fish.
  • You can add a pinch of red pepper flakes for a touch of heat.
