  • 3 pounds beef short ribs, bone-in
  • 1 cup soy sauce
  • 1/2 cup mirin
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon black pepper
  • 1/4 cup water
  • 1 tablespoon cornstarch (optional, for thickening glaze)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Pat the beef short ribs dry with paper towels.
  3. In a bowl, whisk together soy sauce, mirin, brown sugar, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and black pepper to create the marinade.
  4. Place the short ribs in a large bowl or a resealable plastic bag. Pour the marinade over the ribs, ensuring they are well coated. Marinate for at least 30 minutes at room temperature, or for up to 4 hours in the refrigerator.
  5. Remove the ribs from the marinade, reserving the marinade. Place the ribs in a single layer in a roasting pan. Add 1/4 cup of water to the bottom of the pan.
  6. Cover the roasting pan tightly with foil.
  7. Roast for 3 hours, or until the ribs are very tender.
  8. Remove the foil. Increase the oven temperature to 400°F (200°C).
  9. While the ribs are finishing, strain the reserved marinade into a saucepan. Bring to a simmer over medium heat. If you prefer a thicker glaze, whisk together cornstarch with a tablespoon of cold water and stir it into the simmering marinade. Cook until the glaze thickens, about 2-3 minutes.
  10. Brush the thickened glaze over the short ribs. Return the ribs to the oven, uncovered, for 10-15 minutes, or until the glaze is caramelized and slightly sticky.
  11. Let the ribs rest for 10 minutes before serving.

Notes

  • For meal prep, you can braise the ribs ahead of time and reheat them with the glaze before serving.
  • Serve with steamed rice and your favorite Asian vegetables.
  • Adjust the sweetness and saltiness of the glaze to your preference.
