2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup (1 stick) unsalted butter, softened
2 large eggs
1 cup buttermilk
1 teaspoon vanilla extract
For the Swirl:
1/2 cup packed brown sugar
2 tablespoons ground cinnamon
1/4 cup (1/2 stick) unsalted butter, melted
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and 1 teaspoon of cinnamon.
Cut in the softened butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
In a separate medium bowl, whisk together the eggs, buttermilk, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
In a small bowl, combine the brown sugar and 2 tablespoons of cinnamon for the swirl.
Pour half of the batter into the prepared loaf pan. Drizzle half of the melted butter over the batter, then sprinkle half of the brown sugar and cinnamon mixture.
Pour the remaining batter over the top. Drizzle with the remaining melted butter and sprinkle with the remaining brown sugar and cinnamon mixture.
Use a knife or skewer to gently swirl the cinnamon-sugar mixture into the batter.
Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
This bread freezes well. Wrap it tightly in plastic wrap and then in foil.
For a richer flavor, you can use a combination of buttermilk and sour cream.
