Crispy and delicious air fryer dumplings made with rice paper wrappers and a simple tofu and vegetable filling. A perfect healthy appetizer for game day or any gathering.

Ingredients

  • 1 block (14 oz) firm or extra-firm tofu, pressed and crumbled
  • 1 cup finely chopped mixed vegetables (e.g., carrots, cabbage, mushrooms, bell peppers)
  • 2 green onions, thinly sliced
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp soy sauce or tamari
  • 1 tsp sesame oil
  • 1/4 tsp black pepper
  • 1215 sheets rice paper wrappers
  • 1 tbsp neutral oil (like avocado or canola)

Instructions

  1. In a medium bowl, combine the crumbled tofu, chopped vegetables, green onions, garlic, ginger, soy sauce, sesame oil, and black pepper. Mix well until all ingredients are evenly distributed.
  2. Prepare your rice cream station: fill a shallow dish with warm water large enough to dip a rice paper wrapper. Have your tofu mixture and a clean, damp kitchen towel ready.
  3. Dip one rice paper wrapper into the warm water for about 15-20 seconds, or until pliable but not overly soft. Carefully lay it flat on your work surface.
  4. Place about 2-3 tablespoons of the tofu filling near the bottom edge of the wrapper.
  5. Fold the bottom edge of the wrapper up over the filling. Fold in the sides, then tightly roll the dumpling upwards to create a sealed roll. Repeat with the remaining wrappers and filling.
  6. Lightly brush the air fryer basket with neutral oil or use parchment liners. Arrange the dumplings in a single layer, ensuring they do not touch.
  7. Lightly brush the tops of the dumplings with oil.
  8. Air fry at 375°F (190°C) for 10-12 minutes, flipping halfway through, until the wrappers are golden brown and crispy.
  9. Serve immediately with your favorite dipping sauce.

Notes

  • For a gluten-free option, ensure you use tamari instead of soy sauce.
  • Dipping sauce ideas: sweet chili sauce, soy-ginger sauce, or a peanut sauce.
  • You can substitute tofu with finely chopped cooked chicken or shrimp for a non-vegan version.
  • Ensure your vegetables are chopped very finely for easier wrapping and even cooking.
